Sweet Potato Cashew Bake

1/2 c. packed brown sugar

1/3 c. broken cashews

1/2 tsp. salt

1 can (8 oz.) peach slices, well drained

1/4 tsp. ginger

2 lb. (5 or 6) sweet potatoes

3 tbsp. butter

makes six servings

Cook, peel, and thickly slice potatoes. Combine brown sugar, cashews, salt, and ginger. In a greased baking dish, layer half of the peach slices an half of the potato slices. Cover with half of the suger mixture. Repeat layers. Dot with butter. Bake, covered, at 350° for 30 minutes. Uncover and bake for 10 more minutes. Spoon syrup over before serving.
